Veggie and Hummus Sandwich

Enjoy this easy-to-make healthy and delicious veggie hummus sandwich for lunch or anytime you need a quick meal on the go.

Ingredients
- 2 slices bread
- Handful spinach leaves
- 1/4 red bell pepper
- 1-2 cheese slices
- 3 tbsp. hummus
Directions
Rinse off red bell pepper and spinach leaves with water.
Slice the red bell pepper and cheese.
Cut two slices of bread.
Spread hummus onto one of the slices of bread.
Layer spinach, red pepper slices and cheese on top of the slice of bread with hummus.
Add second slice of bread on top.
Notes
Optionally add or substitute other veggies on the sandwich such as shredded carrot, cucumber, sprouts or avocado
