Pumpkin Seed Pesto

A deliciously simple recipe for pumpkin seed pesto used like any other pesto to top a piece of squash, fish, pasta or stirred into a soup.

Ingredients
- 1/2 cup pumpkin seeds
- 1/2 cup cilantro
- 1-2 cloves garlic
- 1 tsp lime zest
- 1 tbsp lime juice
- 1/2 tsp salt
- 1 tbsp extra-virgin olive oil
- Pinch of red pepper flakes
- 1/4 cup parmesan cheese
Directions
Mince garlic cloves.
Grate parmesan cheese.
Combine all ingredients in a food processor or blender.
Pulse until a coarse paste forms.
Notes
Cilantro maybe substituted with parsley
When using parsley remove lime zest, add 1 tsp lemon zest and 1 tbsp lemon juice
Red pepper flakes maybe substituted with 1/2 a jalapeno
Parmesan cheese maybe substituted with 1 tbsp nutritional yeast
Optionally add or reduce salt to taste
