Grain Free Nutty Granola

Ingredients
- 1 cup Raw Almonds
- 1 cup Raw Walnuts
- 1 cup Raw Pecans
- 1 cup Raw Brazil Nuts
- 1/2 cup Apricots
- 1/2 cup Organic Sesame Seeds
- 4 tbsp. Organic Flax Seeds
- 1/2 cup Organic Unsweetened Coconut
- 4 tbsp. Organic Chia Seeds
- 1/2 cup Organic Coconut Oil
- 1 tsp. Honey
- 2 tsp. Pure Vanilla
- 1 1/2 tbsp. Wholesome Light Brown sugar
Directions
Preheat oven to 160 °C (325 °F).
Set aside a large cooking tray for later use.
Roughly chop the nuts and place in a large mixing bowl.
Add flax seed, unsweetened coconut, and chia seeds.
Measure the coconut oil and place into a small saucepan.
Add the honey and organic sugar to the oil.
Melt these three ingredients together on medium-low.
Add the vanilla and stir.
Pour the mixture over the nut mixture and stir until coated.
Pour the mixture out evenly onto the cooking tray, using a spatula; be sure to get all the ingredients and sweeteners.
Bake granola for 20 minutes.
After 20 minutes remove the tray from the oven.
Turn oven up to 170 °C (340 °F).
Add the apricots and sesame seeds to granola.
Place the mixture back into the oven for 8-10 minutes or until the granola begins to get golden brown.
Remove cooking tray and allow cooling completely.
Store in glass container(s) in refrigerator.
Notes
Optionally add 1 1/2 tsp. cinnamon
Optionally add 1/3 cup organic pumpkin seeds
Optionally add 1 Intensely Dark Chocolate bar broken up into small pieces when adding apricots
Suggested serving size is 1/4 cup of granola as topping on Chia Pudding Parfait
